Made exclusively with fresh pasteurised goat’s milk from a Volterra farm, natural rennet, selected milk enzymes and Volterra salt. This is a very scented, semi-ripe white cheese with a crumbly texture and an assertive flavour.
Pairings: Delicious for a special aperitif, with a glass of sparkling white wine. Excellent also with pumpkin or fig mostarda, or with acacia honey.
