SEMI-SEASONED PECORINO CHEESE

"PECORINO A LATTE CRUDO"

Made with fresh sheep’s milk, natural rennet and Volterra salt. Also called “Cheese of the good old days”, this pecorino cheese undergoes a very special processing method. As soon as the freshly milked milk from selected farms in Volterra reaches our dairy, it is immediately brought to temperature and curdled to keep the wholesome taste of sheep’s milk unaltered. Raw milk pecorino cheese is only produced from mid-January till June, when pastures are at their best, granting this cheese its unique flavour.
This savoury cheese has an intense aroma and a typical eye formation. It is matured for at least 45 days.

Pairings: This cheese should be savoured alone to fully enjoy the taste of good, fresh sheep’s milk. It is excellent with cold cuts and red wine.
