The high quality of the day’s fresh milk we use is fully revealed in unripe cheeses; skilful manual processing does the rest. These products let you rediscover the true taste of wholesome cheese from bygone days.

VEGETABLE RENNET PECORINO CHEESE

In our estate of Castel San Gimignano called “Il Cardino” our grandmother and then our father Venio began producing cheese: the milk was processed raw with “presura” (vegetable rennet) and matured on wooden boards, not in cold storage but in a room of the house.

From these memories came the desire to rediscover these old flavors and these ancient processing methods. Even the shape of “Cardino” was picked up by the memory of the old containers that were used by our grandmother. So were born our vegetable rennet cheeses that recall our origins.

GOAT CHEESE

We have expanded our range of dairy products to include goat’s milk cheeses, made exclusively with the day’s fresh milk from Volterra; these cheeses have a balanced taste and fully enhance the quality that has always distinguished Caseificio Nuovo.

SEMI-SEASONED PECORINO CHEESE

These pecorino cheeses are matured for an average of four months and have a mild and yet intense flavour.
They are excellent with cold cuts and are very tasty with pears or honey, but they are also great alone with a glass of red wine.

Ripe pecorino cheeses are our most exquisite cheeses. Our artisan cheese-making methods and a long maturation process grant these valuable cheeses a unique and intense flavour, making them the ideal complement for important meditation wines.
